auber genius chocolate cake
Move over Nigella….!
This most amazing chocolate cake is a recipe borrowed from my fabulous gal pals at Balanced Wellness. Its intense, mouthwatering, moist and super tasty. Really simple to make and contains no wheat or dairy. Give it a try and let me know what you think…!
300g Dark Organic Chocolate
50g Cocoa Powder
60g Ground Almonds
200g Clear Honey
2tsp Baking Powder
1/4 tsp Salt
Boil aubergines for approx 10-15 minutes, skin them and puree
Add chocolate to the puree, stir until melted
In a large bowl whisk together all the other ingredients until slightly bubbly
Fold in the melted chocolate and aubergine in the large bowl with the other ingredients. Whisk everything together.
Pour into a greased or lined baking tray
Bake in the oven at 180 degrees for 30 mins
Leave to cool before serving and keep in the fridge for a couple of days
